Seaweed and kelp are the vegetables of the sea

Since 2019 Trøndelag Sankeri has supplied renowned restaurants and hotels in Trondheim and Oslo with plants, mushrooms, berries, seaweed and kelp.

Jim-André Stene from Trøndelag Sankeri finds many of his favourite flavours in the shore side.

At this time of year, the truffle seaweed is one of my favourites, says Stene from Melhus kommune.

Since 2019, Stene has run Trøndelag Sankeri and today supplies plants, mushrooms, berries, seaweed and kelp to several renowned restaurants and hotels in Trondheim and Oslo.

-Each season offers unique flavors and I have to plan the delivery according to nature’s calendar. We focus on sustainable harvesting so that the species persist year after year, explains Stene.

Trøndelag Sankeri has over 200 different products on its order list and all are collected in Trøndelag.

Delicacies on the shore

During the Seafood Festival, Jim André Stene will talk about different types of seaweed and kelp found on the shore, and how you can use this in cooking.

-I want to demonstrate how easy it is to pickle seaweed and how you can use truffle seaweed for a lovely truffle mayonnaise. Many ask if there is anything poisonous in the shore, and to that I can say that there is no poisonous seaweed and kelp in Norway. It is perfectly safe, concludes Stene.
